STORY

Edrick is married to Clare with whom he has six children.

Edrick studied as a Classical guitarist, graduating in Classical Guitar from Victoria University, New Zealand, with the first B.Mus in guitar performance. He furthered his studies in Madrid  where paella was part of the staple diet for a poor student. He returned to New Zealand and built a successful concert career, touring for the Music Federation of New Zealand, as well as being a Performer in Residence at Armidale University, and a Radio New Zealand National Recording Artist. After a successful career as a Concert guitarist, Edrick felt an overwhelming call of God to train for the Anglican Ministry. Edrick and Clare and their family of 5 moved to Spain (number 6 being born in Spain) to work with the Spanish Anglican Church  and later as the Anglican Chaplain on Ibiza. 

Edrick entered and gained the Accessit diploma with 5th place in 2012 and 4th place in 2013. In 2014 He partnered with chef Miguel Cuevas (Flavours of Spain) and Concurso de Paella Valenciana under the patronage of Ayuntiamento de Sueca to co-ordinate the first International Competition of Paella in Manly, Sydney. With the judges from Valencia he selected the three finalists from this 1st competition in Sydney who were sent to compete in Sueca. For his co-ordination and organisation of the Ist International Paella Competition, he was awarded International Partner Status with the Concurso de Paella Valenciana of Sueca.

In 2015 he was awarded The Tetsuya Wakuda Excellence Award, Best Dish of Taste of Tasmania, for his newly created Tasmanian dish, Paella de Mariscos Estilo de Tasmania, which showcases  Tasmanian ingredients and matches superbly with Goaty Hill Riesling. 

During their time in Spain, Edrick discovered the art of the Valencian Paella - technically a Valencian dish of the Catalonian Community but one that typifies Spain as a whole.

Casa Paella LTD  catering began upon their return to New Zealand, and it was from here that Edrick entered the 52nd and 53rd Concurso Internacional de Paella Valenciana a few years later, held in the Valencian village of Sueca. This is the most prestigious paella competition in Spain and across the world. Only 30 chefs are selected from leading restaurants internationally to compete. Gaining one of the 8 awards demonstrates prowess as a leading international paella chef.
